If we're going non-horror, you can't beat "Lilo and Stitch". Awesome all the way through. Unless you don't like Elvis. (It has more Elvis songs than any of Elvis' movie did. And great instrumentals.)

I'm adding Watchmen to my list. Bob Dylan, Nina, Simon and Garfunkle AND Leonard Cohen? I wonder who Zack Snyder had to blow to get all those great songs for this flick.
Speaking of Simon and Garfunkle, you can't have a great soundtrack discussion without mentioning their numerous contributions to The Graduate.
